How to make Chinese rice easy and fast

Chinese rice, also known as fried rice, is one of the most popular dishes of Chinese cuisine . It is usually served as a side dish of meats, chickens, pork or as the main sole dish.

The version we usually eat of fried rice in our countries has its origins in the Chinese-American cuisine of the immigrants who came to the city of San Francisco.

The original idea of ​​this recipe was to take advantage of the leftovers of food (meats, vegetables) by mixing them with rice.

Next I will explain to you details, step by step, how to make Chinese rice or fried rice. This is an easy recipe to prepare , you should only have defined the ingredients you are going to use and follow the steps that I give you next.

Ingredients to make Chinese fried rice

Rice

The first thing you need is to have white rice refrigerated, made several hours in advance, if it is from the previous night, better. This is so that the grain is cold and not as fluffy as when it is freshly made. I recommend that you prepare it by following my recipe for white rice.

Once you have solved that first step, go with the others ingredients of your Chinese rice.

Fat

Since we are going to prepare fried rice, you need to use fat. Ideally, you use lard, it gives you a lot of flavor. In fact, it is one of the secrets of restaurants. If you do not have, or do not want to use it, vegetable oil also works.

Meats

Choose the proteins you want to put. My recommendation is chicken and fresh prawns. But you can put beef, pork, pieces of smoked pork chop, turkey, squid, ham, whatever you want.

Chop the meats in medium cubes. Clean them well of any fat they have and reserve them.

Vegetables

You can use whatever you get in the fridge. The ones I recommend: carrots, celery, peas, bean sprouts, chives and, very important, fresh ginger.

Ginger gives it a lot of flavor. Do not dispense with it (unless you do not like it).

The egg

It is common for fried Chinese rice to carry eggs. The simplest thing is to make a scramble or tortilla in a separate pan and reserve it.

Making the Chinese rice

The preparation is extremely easy and is fast as long as you have all the ingredients chopped beforehand.

Use a wok or a large deep skillet. Heat it to the fullest. Wait until you start to smoke before putting the fat (either lard or vegetable oil).

Skip the meat one by one for no more than 4 minutes. If your kitchen reaches high temperatures, in this period of time they will be well cooked. Otherwise, cook for a couple more minutes.

Reserve the proteins in a separate container and start sautéing the vegetables in the same wok with an extra spoonful of fat.

Saute the ginger first, with caution because it can burn very quickly. Then add one by one the carrot, celery, peas, bean sprouts and other vegetables except the spring onion. Add a touch of salt or soy sauce.

Add the previously cooked egg. Add the meats.Both options are valid and it depends on your taste.

Remove the wok from the heat, add the chopped onion and that's it, you have a delicious fried rice made at home.

As I explained at the beginning, this would be the "Americanized" version of fried rice. In other countries there are variations on how to prepare this dish. In Spain they call rice three delicacies, for its main ingredients: carrot, egg omelette and cooked ham.

In Peru it is known as chaufa rice, and has practically become a national dish.

How to make fried Chinese rice

Easy Chinese rice recipe for 4 people. Ideal for beginners.If it's the day before, the better. Separate the grains well so that it is loose. Reserve it.
  • Heat a wok or deep frying pan, add 1 tablespoon oil (or lard) and cook the meat, one by one (pork, beef, chicken, shrimp). Reserve them separately.
  • In the same wok add a little more fat and skip the Vegetables in this order: first the ginger, the carrot, the celery, the peas, the bean sprouts and any other you include except the onion. Put a pinch of salt or a spoonful of salted soy sauce.
  • Add the meats you have reserved and stir a couple of minutes.
  • Add the previously cooked eggs in another pan.
  • Add white rice and mix well.
  • If desired, add a couple of tablespoons of dark soy sauce to color the dish. If not, ignore this step.
  • Add the fresh spring onion and remove from heat.
